Get ready to sink your teeth into something good.

You're gonna need your rib bib for this one. Diva Q shows us how to create ribs that are tender, sweet, and Rye spiced. They smoke low and slow, and are definitely worth the wait.

STEPS

1. Make the rub: Whisk all ingredients together in a large bowl – Store in an air tight container out of direct sunlight.

Ingredients
  • 1 Cup Brown Sugar
  • ¼ Cup Smoked Sweet Paprika
  • 3 Tbsp Kosher Sea Salt
  • 2 Tbsp Finely Ground Pepper
  • 2 Tbsp Mild Chili Powder
  • 2 Tbsp Garlic Powder
  • 2 Tbsp Onion Powder
  • 1 Tsp Ground Cumin
  • 1 Tsp Ground Coriander
  • 1 Tsp Ground Chives
  • 1 Tsp Ground Ginger
  • 1 Tsp Chipotle Powder
  • 1 Tsp MSG – Aji No Moto Brand
  • ½ Tsp All Spice Powder

2. Preheat the grill to 225℉ with the lid closed for 15 minutes.

3. Make the ribs: Remove membrane from ribs.  Spritz ribs with apple juice. Season generously with rub.

Ingredients
  • 4 racks Thick St Louis Cut Ribs
  • 4 cups Apple juice

4. When ready to cook, set the Traeger temperature to 275℉ and Place the ribs, bone-side down, directly on the grill grates. Close the lid. Spritz every 45 minutes until the internal temperature is 160-170℉.

Ingredients
  • 4 racks Thick St Louis Cut Ribs
  • Apple juice

5. Remove ribs and wrap ribs in a double layer of foil meat side down.  Add 3/4 cup apple juice to the foil packet.  Place ribs on grill increasing temperature to 275F.  Continue to grill until the internal temperature is 195℉.

Ingredients
  • 4 cups Apple juice

6. Make the sauce: In a pot on medium heat melt butter. Add in onions and sauté until softened and translucent.  Whisk in peach preserves, ketchup, brown sugar, apple cider vinegar, honey, Worcestershire, Cholula, salt, onion powder, garlic powder and black pepper. Simmer for 20 minutes on a low boil.  Remove from heat and whisk in WhistlePig Whiskey of choice.

Ingredients
  • 1 Cup Brown Sugar
  • ¼ Cup Smoked Sweet Paprika

6. Remove ribs from foil carefully and place on grill meat side up.  Generously glaze with sauce and continue to cook until the internal temperature is 204-206℉.  Remove from grill and let rest 10 minutes.
